We’re always trying to eat more Spinach, aren’t we? And perhaps you diligently buy a pack every week to reach your resolve to eat more Spinach. Maybe you even have a Spinach patch growing in your veggie garden, because if nothing else will, Spinach will grow! But every so often, the Spinach is forgotten in the bottom of the fridge – not on purpose of course! And perhaps they’ve wilted slightly and you don’t think they’ll be of any use. Or you only used up half a pack and are a bit stumped as to what to do with the rest. Well don’t you worry about any of those things! Treat your Spinach leaves to a bit of garlic, olive oil, pine nuts, salt and pepper and they will come alive on your plate. And if you don’t believe me, you’ve got to try this! Although this dish is great as is, you could add a crumble of goats cheese or feta for an extra creamy flavor. And its a perfect no flop dish to serve to friends who pop in around lunch or dinner time!
